I usually start making black bean pico on a regular basis when football season starts. Last Friday was the first University of Houston game and this was my contribution to our tailgating party. Someone told me they could eat it with a spoon and nothing else. Normally I like mine with tortilla chips, or on a burger, or chicken, or a breakfast taco, or just about anything else. And wouldn't you know there was some leftover... or did I just forget to bring it all to the tailgate. Oops. So guess what I did....
I ate some black bean pico with tortilla chips.
And then I made a burger with black bean pico.
And then I grilled some chicken with black bean pico.
If I'd had eggs and tortillas, I would have made breakfast tacos with black bean pico.
Black Bean Pico Recipe
Ingredients:
4 roma tomatoes, seeded & diced
1 red onion, diced2 jalapenos, seeded & minced
1 can black beans, rinsed & drained
handful cilantro, chopped
lime juice
kosher salt
Combine roma tomatoes through cilantro in a large bowl. Toss to combine. Season with lime juice and kosher salt to taste. Enjoy. On everything.
Looks nice but honestly I don't know what black beans are or cilantro or jalapenos.I don't know if they are popular over here in Australia-love dee x
